摘要
近年来餐饮业的竞争日趋激烈,劳动力价格也不断上涨,人工成本在餐饮总成本中所占的比重越来越大。对餐饮业人工成本控制中定岗定编和服务流程设置不合理、流失率高以及劳动效率低等问题,可从科学合理定岗定编,通过培训、物质激励与情感激励提高员工满意度,优化服务流程和加大技术创新,提高劳动生产效率等方式,予以有效的解决。
The increasingly acute competition in catering industry brings with a rise in the price of labor,and labor cost accounts for growing proportion of the total cost of catering industry. Under the background of labor cost control in catering industry, the problems in labor cost control in catering industry, such as unreasonable positions and personnel allocation and service process,high labor draining rate and low labor efficiency,etc, can be approached through scientific and reasonable positions and personnel allocation,improvement of employee satisfaction, material innovation.
