摘要 食品中的重金属污染严重影响人体健康,铅、砷等重金属检测是重要的食品卫生检测项目。目前,痕量重金属检测方法主要有光谱法和电化学法,现综述两种方法特别是电化学法在食品中重金属检测中的应用。 Heavy metal pollution in food seriously affect human health. The detection of heavy metals such as Pb,As is an important food hygiene test item. At present,the detection methods of trace heavy metals are mainly spectroscopy and electrochemical method.This article reviews the application of detection of heavy metals in food with two methods especially electrochemical method.
