沙门菌分子鉴定和分型方法的研究进展 被引量:4

摘要 沙门菌广泛分布于自然界,主要存在于肉类和禽蛋类,至今已鉴定的血清型有2500多种,其中鼠伤寒沙门菌、猪霍乱沙门菌、肠炎沙门菌等是最常见的食源性致病菌。沙门菌已成为许多国家食源性疾病的首要病原菌,为此,许多国家和组织建立了沙门菌监测系统,以早期识别、鉴定其来源和危险因素,减少沙门菌对人的危害。快速、有效、准确地鉴定并对沙门菌进行分型,以判定其同源性,追溯致病食品的共同来源,可以从根本上控制食源性疾病的传播,最大限度地减少对消费者健康的损害。
