摘要
针对传统食品切割机在实际应用中出现的粘刀、食品外形损坏及需定时清理刀具等现象,提出将超声波技术引入到食品切割机的设计环节中,将超声波能量转化为振动,并以高频振动的方式快速处理食品。重点阐述超声波食品切割机工作原理及结构设计,超声波切割机设计有独特的食品工作台旋转运动装置与水平直线运动装置,与超声波切割刀配合动作可以实现平面内360°任意角度的切割,能将整盘的片状食品切割成指定的多边形,避免了手工切割分块不均匀的现象。该机切出的食品切面干净、整洁,食品分块的大小和重量精确一致,弥补了传统切割机的不足。
Some problems in practice, such as the food stick on cutting knife, the food profile damaged, and knife cleaning. The ultrasonic technology was introduced into the design of food cutting machine. The ultrasonic energy was converted into vibration, and the high frequency vibration could cut the food rapidly. The working principle and structural design for ultrasonic food cutting machine were discussed. This machine can cut at any angle in a plane and cut into specified shape, so the case of uneven cutting is avoided. The cutting surface of the food is clean and tidy, furthermore the size and weight of the food is the same. The shortcomings of traditional cutting machine are made up.
