摘要
用复合蛋白酶水解经膨化并去淀粉和色素后的玉米蛋白粉,考察水解时间对其酶解物抗氧化活性的影响。结果表明,随着水解时间的增长,水解物中小于1 000Da的短肽含量逐渐增加,水解时间与酶解物的清除DPPH自由基能力、清除·OH能力和还原力呈正相关趋势,与Fe2+的螯合力呈负相关趋势,水解时间对酶解物的O2-·清除力无显著影响。
Protamex was used to hydrolyse corn gluten meal (CGM) , which was treated by destarching and depigmentation, and the effect of hydrolysis time on antioxidant activity of hydrolysate was studied. The results showed that the content of short peptides which was less than 1 000 Da increased gradually with hydrolysis time. The hydrol ysis time was positively correlated to the clearance rates of DPPH radical, hydroxyl radical and reducing power of hydrolysate, it had negative correlation to the Fe^2+ chelating ability of hydrolysate, but it had no significant effect on scavenging ability of superoxide anion of hydrolysate.
