摘要 通过文献分析法和田野调查法,从时空分析的视角探求杭州美食街区的发展历史、演变规律及特征.结果发现在服务经济和城市休闲化等多重因素的推动下,美食街区逐渐成为城市居民和外来旅游者光顾游览的重要场所.杭州美食街区从20世纪90年代起步,在市场和政府双股力量的推动下,业已成为城市的金名片.发展至今,历经形成期、初步发展期和快速发展期3个阶段,每一阶段均有知名的街区出现;在空间上,拥有美食街数量最多的是拱墅区,但经济效益最好的是上城区;在布局上,杭州美食街呈现"一轴两极"的"哑铃形"格局,如今逐渐形成"环西湖美食圈"的形态;美食街在形成过程中遵循消费市场依附和原料市场依附的内在机理. Using literature analysis and field survey ,the development history ,evolution rules and characteristics of Hangzhou food districts are explored in the temporal‐spatial perspective .The results show that food districts have gradually become important places for city residents and foreign tourists in the promotion of multiple factors like service economy and city leisure .Hangzhou food districts started from 1990s ,and have become the city's golden card in the promotion of the double power of market and the government . Up to now , the districts have experienced formation stage , preliminary development stage and rapid development stage ,and there are famous districts in each stage .In the space ,Gongshu district has the largest number of food streets ,but Shangcheng district has the best economic benefit .In the layout ,Hangzhou food streets present the“dumbbell shaped”pattern with“one axis and two poles” ,and now has gradually formed the“West Lake food circle” shape .Food streets follow the inner mechanism of consumption market attachment and raw material market attachment in the formation process .
