摘要
为了解EPS的粒径、热稳定性、乳化特性及流变学特性,以实验室选育的一株胞外多糖(EPS)高产菌株(Bacillus amyloliquefaciens LPL061)为材料,并考察EPS的体外免疫调节功能.结果表明:芽孢杆菌EPS粒径大小为445.6 nm;熔融温度为265.18℃;对食用油乳化效果较好,乳化指数达50%以上;EPS溶液为典型的假塑性流体,在20~80℃范围内黏度变化较小,具有较好耐温性;EPS能促进小鼠脾淋巴细胞增殖及细胞因子产生,具有一定的免疫活性.
In this study,the particle size,thermal stability,rheological properties,emulsifying properties and immunomodulatory effects of exopolysaccharide of a high-yield strain Bacillus amyloliquefaciens LPL061 were studied and compared with those of xanthan gum.The results showed that the molecular size of EPS was 445.6 nm,the melting temperature is 265.18 ℃.LPL061 produced more stable emulsions with edible oils than xanthan gum.EPS also showed pseudoplastic non-Newtonian fluid behaviour in an aqueous solution,with thermal stability between 20 to 80 ℃.The EPS from LPL061 showed potential of immunomodulatory effects by promoted the lymphocyte proliferation of mouse.
