摘要 贵州省作为酿酒大省,同时也是酱香型白酒的发源地及主产地,"贵州窖酒"在全国范围内是独树一帜的,所选原料、制曲、窖池大小设计、酿造工艺等方面都有其独到之处。简略回顾了贵州酒的发展历史,根据笔者的实际经验比对了现阶段"贵州窖酒"传统酿造工艺的优缺点,指出应从原料创新、工艺创新、设备机械化改造、推进相关标准完善等方面作出努力,以推动贵州酒的发展。(晓文) Guizhou province is the major province of liquor-making and it is also the birthplace and the main producing place of Jiangxiang Baijiu (liquor). Guizhou Jiaojiu liquor had its unique features nationwide in raw materials selection, starter-making, cellar design, and producing tech- niques. In this paper, the development history of Guizhou Jiaojiu liquor was reviewed. The techical disadvantages and advantages of Guizhou Jiaojiu liquor at the present stage were introduced based on the authors' practical experience. The healthy development of Guizhou Jiaojiu liquor was dependent on constant innovations in raw materials and techniques, the improvement of equipments, and the perfection of the related standards etc. (Tran. by YUE Yang)
