花生红衣多酚类物质组成及抑菌活性研究 被引量:9

摘要 以花生红衣为原料,采用70%乙醇作溶剂超声辅助提取花生红衣多酚类物质,并进行纯化,研究花生红衣多酚类物质组成及其对食品中常见污染菌的抑菌活性及保鲜性能。结果表明:花生红衣多酚类物质中多酚含量为64.45%,黄酮含量为12.76%,原花青素含量为81.90%,白藜芦醇含量为0.005%。花生红衣多酚类物质对细菌抑菌作用显著,对真菌不显著,且抑菌活性随着质量浓度的增加而增强。 The polyphenols were extracted from peanut seed testa by ultrasonic-assisted extraction with 70% of ethanol as solvent. The crude extracts were purified,and the composition and antibacterial activity of the polyphenols against common contaminated bacteria were investigated. The results indicated that the contents of polyphenol, flavone, procyanidins and resveratrol in peanut seed testa polyphenols were 64. 45%, 12. 76%, 81. 90% and 0. 005%, respectively. The polyphenols from peanut seed testa had strong inhibitory effects on bacteria, while it had no significant effect on fungus, and the antibacterial activity increased with the mass concentration of the polyphenols increasing.
