摘要 [目的]研究不同微波功率下木耳的干燥特性。[方法]从含水率、干燥速率变化关系上分析微波功率对木耳微波干燥特性的影响,得出木耳微波干燥过程的失水规律。[结果]试验表明,微波功率越大,木耳干燥速度越快;在同一微波功率下,初期干燥速度较缓慢;中期加速干燥,后期出现恒速或降速阶段。微波功率越大,所干燥物料的温度越高,干燥相同时间升温也越快;当达到70℃左右,木耳表层的保护膜被破坏,失去了对木耳内水分的保护作用,再次呈现温度迅速上升趋势。分析认为,微波干燥速度受干燥场内部能量转换过程影响,同时也取决于物料内部结构。[结论]研究可为木耳微波干燥的工艺优化和新型干燥设备设计提供参考。 [ Objective ] To study drying characteristics of Auricularia auricular under different microwave power. [ Method ] The effect of microwave power on the drying characteristic of A. aarlcular was analyzed from the changing relationship between water content and drying rate to get water loss rule in the A. auricular drying process. [ Result ] The results showed that the greater the microwave power was, the faster the drying speed was. Under the same microwave power, drying velocity was slow in the early days. While, drying velocity accelerated in the mid-term and constant speed or falling rate stage appeared in the late period. The greater the microwave power was, the higher the temperature of drying was. When drying for the same time, temperature increased more quickly. When reaching 70 ~C, the protective fihn in the surface was damaged, losing the protective function for the water in the A. urlcular. Thus, the temperature was on the increase. The reason is that the microwave drying speed is affected by the internal energy conversion in the dry field. Meanwhile, it also depends on the internal structure of material. [ Conclusion] The study can provide reference for A. uricular microwave drying technique optimization and new type equipment design.
