摘要
【目的】研究气调贮藏不同温度对新疆骏枣干枣贮期生理和贮藏效果影响,筛选出适宜的气调贮藏温度。【方法】设置2种不同温度处理,从气调贮藏温度与骏枣干枣呼吸强度、乙烯释放量、总酸、总糖含量、VC、水分含量及可溶性固形物含量等关系进行试验。【结果】骏枣干枣气调低温(5℃)贮藏,能有效降低乙烯释放量和呼吸强度,维持VC、总糖、总酸、SSC含量在较高水平,对其品质及风味保持较好。【结论】气调低温(5℃)贮藏使骏枣干枣呼吸强度减弱,乙烯释放量减少,VC含量下降缓慢,糖、酸等营养物质消耗略低,可溶性固形物含量变化幅度较小,较好的维持了骏枣干枣贮期的品质。
[Objective] This research focuses on the different temperatures to control atmosphere storage which influence the storage physiology and storage effect of Xinjiang Jun jujube dates in order to select a proper temperature for storage.[Method] Two temperatures were set,which were room temperature and low temperature (5℃) to study the relation between controlled atmosphere storage temperature and Jun jujube dates respiration rate,ethylene production,total sugar content,total acid content,Vitamin C content,moisture content and soluble solids content,etc.[Result] Jun jujube dates that were stored in controlled atmosphere cold storage at low temperature (5℃) could reduce the ethylene production and respiratory intensity,hold the Vitamin C,total sugar,total acid,SSC content at high level,thus keeping the Jun jujube dates with high quality and flavor.[Conclusion] At the temperature of 5℃ Jun jujube dates decreased respiration intensity,reduced ethylene production,VC content decreased slowly,sugar,acid and other nutrients consumed slightly slower and soluble solids changed less.For better controlled atmosphere storage quality of Jun jujube dates,it is important to store sample fruits at low temperature (5℃).
