菜单文化专有项的翻译研究——以“文化转向”为视角

Research on the Translation of Menu Culture-specific Items——from the Perspective of the Cultural Turn

翻译是一种跨文化、跨语言的交际活动。对中西方文化的差异及其在菜肴文化上的映射进行考察,在"文化转向"的视角下,可以引入后设表述这一补偿策略。后设表述能提高菜名翻译的准确度和可接受度,在促进跨文化交流、顺畅输出中华饮食文化方面具有独特的效果。以中式菜肴的菜单名翻译为例,从译者的立场、内容侧重、注意事项、运用要求等方面例示后设表述的运用细则,要注意协调好目标语文化与源语文化之间的差异,发挥翻译文化传承和对外输出的功能。

Translation is a communication across various cultures and languages. This paper attempts to make an investigation into the differences between eastern and western cultures and their reflection on food cultures. Moreover, annotation, as a compensatory strategy, is applied from the perspective of the cultural turn. It can increase the accuracy and acceptance of menu translation and has special advantages of promoting international communication and the promotion of Chinese food culture. Application details are demonstrated through its usage in Chinese menu translation from the perspective of the translator＇s standpoint, focus of the content, warnings and requirements, interpreting how to deal with the differences between the native language and the target language and utilizing the function of translation in cultural inheritance and spreading.
