摘要
为了探讨紫叶生菜花青素的积累特点及其氧化还原能力,以国内外10种紫叶生菜为试材,测定不同紫叶生菜品种的花青素含量和DPPH·的清除率、总抗氧化能力、总还原能力。结果表明:大部分紫叶生菜品种叶片颜色越深花青素含量越高,花青素含量最高的品种是S55,总抗氧化能力最高的品种是S44,总还原能力最高的品种是S55;总体来说花青素含量较高的紫叶生菜品种抗氧化还原能力较强。综合评价表明,品种S55表现出较强的DPPH·清除能力、总抗氧化能力和总还原能力,有较好的抗氧化效果。
To investigate the character of anthocyanin accumulation and oxidation-reduction capability of purple lettuce, 10 varieties of purple lettuces derived from domestic and abroad were measured to analyze the anthocyanin content, DPPH ·removing rate, total antioxidant capacity and total reductive capacity. The results showed that most lettuces with dark color have much anthocyanin content. Anthocyanin content of S55 is the highest, the lettuce with highest total antioxidant capacity is S44, and the variety with highest total reductive capacity is S55. Lettuces with dark color have high anthocyanin content. Generally, the majority varieties of purple lettuce with more anthocyanin had bigger capacity of oxidation-reduction capability. The comprehensive evaluation indicated that the cultivar S55 showed the higher DPPH ·radical removing capacity, total antioxidant capacity and the highest total reductive ability, showing the best antioxidant effect among the ten tested cultivars.
