以新鲜山药为原料制备一款营养饮料,正交实验确定最佳工艺条件.结果表明,山药饮料以质量分数表示的最佳配方为:白砂糖4%,果葡糖浆3%,甜蜜素0.01%,精制盐0.2%,维生素C 0.08%,柠檬酸0.1%,羧甲基纤维素(CMC)0.1%,山药汁浓度12.5%.山药清汁中山药多糖质量浓度为5.57 mg/mL,饮料中维生素C质量浓度为0.32 mg/mL,小白鼠经口灌服剂量达10 g/(kg·bw),结果表明该饮料属实际无毒级.该饮料营养丰富,口感良好,具有较高的食用和营养价值.
