山药营养饮料的研制与开发 被引量:11

摘要 以新鲜山药为原料制备一款营养饮料,正交实验确定最佳工艺条件.结果表明,山药饮料以质量分数表示的最佳配方为:白砂糖4%,果葡糖浆3%,甜蜜素0.01%,精制盐0.2%,维生素C 0.08%,柠檬酸0.1%,羧甲基纤维素(CMC)0.1%,山药汁浓度12.5%.山药清汁中山药多糖质量浓度为5.57 mg/mL,饮料中维生素C质量浓度为0.32 mg/mL,小白鼠经口灌服剂量达10 g/(kg·bw),结果表明该饮料属实际无毒级.该饮料营养丰富,口感良好,具有较高的食用和营养价值. Using fresh Dioscorea Batatas as the main materials, a nutritious soft drink is developed. The optimum parameters were determined by the orthogonal method. The optimum formula of the health beverage was as follows: sugar 4%, high fructose cornsyrup 3%, sodium cyclamate 0.01%, salt 0.2%, vitamin CMC 0.1%, the concentration of Yam juice 12.5% performed, and the result showed that the acute oral 〉 rats. It is non-poisonous and safe to be consumed. The good in taste and has high edible value. C 0.08%, citric acid 0.1%, The acute toxicity test was 10g/(kg·bw) was safe to the healthy beverage is nutritious,
