摘要
以新工艺酒母即混菌纯粹培养酒母代替自然培养酒母用于传统工艺黄酒的酿造 ,酿制的黄酒各项指标均符合标准要求 ,且质量明显提高。中试结果表明 ,新工艺酒母用于传统工艺黄酒的酿造是完全可行的。
The paper introduces a new technology i.e.using mixed pure yeast culture in producing yellow rice wine The results of pilot experiments showed that the quality of the yellow rice wine met with the concerned requirements and is improved obviously. So the applying is practical.
