摘要 入池水分是关系到浓香曲酒产量、质量优劣的一项重要的工艺参数。从量水温度及打量水对粮醅的影响、不同季节入池水分的合理调节、异常发酵窖池入池水分的调节等几方面介绍了在不同季节、不同生产情况下 。 Pit entry moisture is an important technological parameter which is closely correlated with the yield and quality of Luzhou-flavour liquor. And its regulation methods during different seasons under any working conditions were introduced in this paper from the aspects of water batching temperature, effects of measuring water on distiller′s grains, proper regulation of pit entry moisture in different seasons, and regulation of pit entry moisture during abnormal fermentation.(Tran.by YUE Yang)
