大蒲莲猪、长蒲及杜长蒲猪胴体性能和肉品质比较 被引量:1

Comparison of Carcass Performance and Meat Qualities of Dapulian Pigs,Landrace × Dapulian and Duroc × Landrace × Dapulian Hybridized Pigs

摘要 研究测定了大蒲莲猪、长蒲二元猪及杜长蒲三元猪的胴体品质和肉质特性。结果表明,大蒲莲猪眼肌面积最小,分别比长蒲猪和杜长蒲猪低36.45%(P<0.01)、31.04%(P<0.05);后腿比例杜长蒲比大蒲莲猪高8.89%(P<0.05);皮率以大蒲莲猪最高,分别比杜长蒲及长蒲高88.36%(P<0.01)和54.63%(P<0.01);瘦肉率以杜长蒲最高,分别比长蒲和大蒲莲猪高2.75%(P>0.05)和16.19%(P<0.05)。大蒲莲猪肉色评分比长蒲二元猪高14.29%(P<0.05);肌内脂肪含量以大蒲莲猪最高,分别比杜长蒲和长蒲高106.67%(P<0.01)和103.76%(P<0.01)。背最长肌胱氨酸含量以大蒲莲猪最高,分别比杜长蒲和长蒲猪高7.14%(P<0.05)和8.25%(P<0.01);蛋氨酸含量长蒲猪比大蒲莲猪高10.65%(P<0.05)。背最长肌硬脂酸以杜长蒲猪最高,其次是长蒲猪,分别比大蒲莲猪高18.43%(P<0.01)、10.88%(P<0.05);油酸以大蒲莲猪含量最高,分别比杜长蒲和长蒲高10.26%(P<0.05)和7.03%(P>0.05)。 The carcass performance and meat qualities of Dapulian pigs,LandracexDapulian and Duroc x LandracexDapulian hybridized pigs were studied.The results showed that,the eye muscle area of Dapulian pigs was the smallest than that of LandracexDapulian and Duroc xLandracexDapulian hybridized pigs,with decrease by 36.45%(P〈0.01)and 31.04%(P〈0.05) respectively.Ham percentage of Duroc xLandracexDapulian was higher than that of Dapulian pigs,with increase by 8.89%(P〈0.05).Skin percentage of Dapulian pigs was higher than that of Duroc xLandrace xDapulian and Landrace xDapulian hybridized pigs,with increase by 88.36% (P〈0.01)and 54.63%(P〈0.01).Lean percentage of DurocxLandracexDapulian was higher than that of LandracexDapulian and Dapulian pigs,with increase by 2.75%(P〉0.05)and 16.19%(P〈0.05).Meat color score of Dapulian pigs was higher than that of LandracexDapulian,with increase by 14.29%(P〈0.05).The IMF content of Dapulian pigs was higher than that of Duroc xLandracexDapulian and LandracexDapulian hybridized pigs,with increase by 106.67%(P〈 0.01) and 103.76%(P〈0.01).The Cys content of Dapulian was higher than that of DurocxLandracexDapulian and LandracexDapulian hybridized pigs,with increase by 7.14%(P〈0.05) and 8.25%(P〈0.O1).The Met content of LandracexDapulian hybridized pigs was higher than that of Dapulian pigs,with increase by 10.65%(P〈0.05).The stearic acid contents of Duroc xLandracexDapulian and LandracexDapulian were higher than that of Dapulian pigs,with increase by 18.43%(P〈0.01) and 10.88%(P〈0.05) respectively.The oleic acid content of Dapulian pigs was higher than that of Duroc xLandrace xDapulian and Landrace xDapulian hybridized pigs,with increase by 10.26%(P〈0.05)and 7.03%(/9〉0.05).
