白莱航鸡受精蛋和无精蛋孵化早期品质差异研究 被引量:2

摘要 通过对白莱航鸡受精蛋和无精蛋进行试验,分析孵化0~4 d受精蛋和无精蛋品质变化规律,比较两种蛋的品质差异.结果表明,受精蛋与无精蛋平均日失重率不同,受精蛋为0.71%,无精蛋为1.00%.受精蛋蛋白pH在孵化早期有一个先上升后下降的过程,在孵化第2d达到最高值(9.44),而无精蛋蛋白pH则一直缓慢上升.孵化开始后,受精蛋蛋白高度先下降后上升,孵化第2d达到最低值(7.0 mm),无精蛋蛋白高度则一直下降.受精蛋与无精蛋哈夫单位在孵化第0~3 d没有显著性差异,第4d差异显著.受精蛋与无精蛋蛋黄颜色均随着孵化的进行发生波动变化.受精蛋在孵化0~4 d中,蛋壳逐渐变薄,气孔数增加,而无精蛋蛋壳厚度与气孔数均变化不显著. The quality differences of white Leghom fertile and infertile eggs during the early incubation stage (0-4 d) were investigated. The results showed that the average daily weight loss of fertile eggs (0.71%) was different from infertile eggs (1.00%). The pH of fertile eggs albumen increased first and then declined, it reached top (9.44) when hatched 2 d, the pH of infertile eggs albumen rose slowly. The albumen height of fertile eggs decreased at beginning and increased later, it reached the lowest value (7.0 mm) when hatched 2 d, the albumen height of infertile eggs declined. There was no significant differences in the haugh unit of two kinds of eggs during 0-3 d. Yolk color changed fluctuantly in fertile and infertile eggs. During the early incubation stage, shell thickness of fertile eggs became thinner and the number of air hole increased, but shell thickness and the number of air hole of infertile eggs had no significant differences.
