摘要 5-甲基-6,7-二氢-5H-环戊并吡嗪是吡嗪的衍生物,作为一种新型的香精,它具有稳定的坚果特征香韵,复配范围广,在食品中应用的范围广泛。综述了5-甲基-6,7-二氢-5H-环戊并吡嗪的性质、合成方法及其应用。重点叙述了5-甲基-6,7-二氢-5H-环戊并吡嗪的性质及其合成方法。 5-Methyl-6,7-dihydro-5H-cyclopen- ta （b） pyrazine is a kind of pyrazine derivatives which impart flavors to foodstuffs and other consumable materials .As a new flavor, it has stable nutty nuances, and can combine several nuances. This paper summarized the synthesis methods, properties and applications.
