渤海黑牛肉品品质的研究

Study on the Meat Quality of Bohai Black Cattle

对 1 0头中上等膘情年龄为 0 .5～ 1岁渤海黑牛进行了不同性别和不同部位肌肉的理化性状及组织学结构测定分析 ,结果表明 :渤海黑牛的眼肌面积为 37.45± 5.38cm2 ,嫩度和熟肉率分别为 3.53kg和 54.0 2 % ;肉品中蛋白质含量较高 ,平均为 2 1 .68% ,脂肪含量较低 ,平均 1 .2 4 % ,属典型的“高蛋白低脂肪”食品 ,总氨基酸含量为 1 8.75% ;肌纤维直径平均为 38.0 1 μm,肌纤维密度为 395.97根 /mm2 ,肌肉纤维纤细 ,肉质嫩。不同性别、部位肌肉的理化特性及组织学结构多数差异不显著 ( P>0 .0 5)。

The experiment detected the physical,chemical traits and histological structure of different sex and parts muscles of 10 Bohai Black Cattle (age:0.5-1 years).The results were as follows:eye muscle area of Bohai Black Cattle was 37.45±5.38cm 2,tenderness and cooked meat percenrage were 3,53kg and 54.02%,respectively;The meat of Bohai Balack Cattle Contained higher protein and lower fat(21.68% and 1.24%,respectively).Total amino acid was 18.75%,average muscle fiber diameter was 38.01μm.muscle fiber density was 395.97N/mm 2.There were no significant different body parts (P>0.05)
