青海省果洛牦牛产肉性能研究

摘要 对果洛地区老龄驮牛 ( 1 0岁以上 )和适龄驮牛 ( 5~ 7岁 )各 3头进行了屠宰试验 ,结果老龄驮牛宰前活重、胴体重、净肉重、骨重、骨肉比、眼肌面积分别为 373.33、2 1 0 .33、1 76.43、33.90 kg、1∶ 5.2和 53.2 0 cm2 ;适龄驮牛以上指标分别为 :2 0 3.33kg、1 1 0 .67kg、90 .60 kg、2 0 .0 7kg、1∶ 4.51和 41 .40 cm2 ,老龄驮牛以上指标均显著高于适龄驮牛。 The Slaughter test was carrried out in 6 Yaks(including 3 pack Yaks over 10 years old and 3 pack Yaks from 5 to 7 years old)in Guoluo prefecture of Qinghai province. The results showed that the live body weight,carcass,net beaf weight,bone weight,bone meat ratio and eye muscle area were 373.33kg,210.33kg,176.43kg,33.90kg,1∶5.2 and 53.20cm 2 in the older pack Yaks,and those indexes were 203.33kg,110.67kg,90.60kg,20.07kg,1∶4.51 and 41.40cm 2 in the younger pack Yaks,respectively.There was a significant difference between older and younger Yaks.
