摘要
利用喷雾干燥技术制备了嗜酸乳杆菌的直投式发酵剂。其中,通过单因素和正交试验确定了抗热保护剂的最佳配比:4%蔗糖、5%糊精和15%脱脂奶粉。再通过单因素和响应面分析法,确定了最佳的喷雾干燥条件:进口温度119℃,进样流速55 mL/h,菌体与保护剂配比1∶28。制备出的嗜酸乳杆菌直投式发酵剂的活菌数为1.67×109cfu/g。
The direct vat starter(DVS) of Lactobacillus acidophilus was prepared by spray-drying. The optimized protectants were determined by single factor experiment and orthogonal experiment. The optimized protectants:4 % sucrose, 5 % dextrin and 15 % skim milk. Spray-drying condition was obtained using the single factor experiment and Response Surface Methodology. The optimized condition: the inlet temperature 119 ℃, material flow rate 55 mL/h, ratio of bacteria and protectants 1 ∶ 28. The viable number of the DVS of Lactobacillus acidophilus can reach 1.67 ×109cfu/g.
