玉米生物活性肽制备、功能及其保健食品研究 被引量:14

摘要 功能性玉米活性肽是玉米中天然存在或通过蛋白酶水解或微生物发酵作用制得的具有特定氨基酸序列和分子量的肽类物质,玉米活性肽具有降血压、降血脂、解酒精毒性、抗氧化、预防脑性肝病、抗疲劳等多种生物活性。该文综述不同功能性玉米活性肽的制备方法、保健功能、作用机理及其在食品、医药以及化妆品工业中的应用,并指出玉米活性肽、功能性食品研究开发中存在的问题及建议。 Corn bioactive peptides with specific amino acid sequences are hydrolysates that exert a positive physiological influence on the body from the native protein by microbial or added enzymes. Corn bioactive peptides have been shown to possess various activities such as antihypertensive,lowering blood lipid,anti–sperm toxicity,antioxidant,antithrombotic and antifatigue effects. Preparation methods,functionality and mechenism of corn bioactive peptides and its appliction in food,Pharmaceutical and cosmetics industries are reviewed in this paper. The existing problems and suggestions on corn bioactive peptides and health foods developments are pointed out in the end.
