摘要
食品安全风险认知是消费者对不安全食品造成损失的可能性和严重性的识别和反应,其影响因素可分为外部和内部两个方面,该研究在国外已是一个相对成熟的领域。通过对不同类型食品安全风险认知的分析与研究,把风险水平降低到可以接受的程度是其主要目的。食品安全风险认知的研究丰富了食品安全行为的研究体系,为食品安全管理提供了理论支持,我国应进一步加强这一领域的研究和完善。
Food safety risk perceptions are the identification of possible losses caused by unsafe foods and consumers' reaction to its seriousness.Influencing factors can be divided into internal and external ones.Food safety risk perceptions research has become mature in foreign countries.Its major aim is to reduce the risk to an acceptable level by analyzing and studying various types of food safety risks.Food safety risk perceptions research has enriched the study of behavior-based food safety and provided the theory support for food safety management.China should further strengthen and improve the research in this field.
