摘要 文中阐述了酵母絮凝性对啤酒酿造和质量的影响,重点分析了原料、麦汁质量、充氧及酵母添加量等因素对酵母絮凝性的影响,同时也从工艺等方面简单阐述了酵母絮凝性的控制途径.
