上海生鲜牛乳中硫氰酸钠生理浓度调查及主要影响因素研究 被引量:6

摘要 针对生鲜牛乳中硫氰酸钠存在的质量安全风险隐患并确定其主要影响因素,在上海地区开展了生鲜牛乳中硫氰酸钠质量分数的正常生理浓度调查.通过已建立的高效液相色谱法对上海市20家奶牛场2012年每月一次的采样检测.根据实验结果,本次调查的生鲜牛乳中硫氰酸钠质量分数符合Poisson4分布,均值为4.16 mg/kg,95%置信区间内的质量分数范围在1.21~7.72 mg/kg.其质量分数变化规律与饲喂十字花科类植物季节一定相关性,因此选取20头健康产奶乳牛分4组进行了动物实验,实验结果表明饲喂十字花科类植物与生鲜牛乳中硫氰酸钠质量分数有显著正相关,是上海地区生鲜牛乳中硫氰酸钠质量分数的主要影响因素. To prevent the risk of sodium thiocyanate concentration in raw mi/k and to determine the major influencing factor, an investigation of sodium thiocyanate normal physiological concentration in raw milk was taken in Shanghai. The sample from 20 cattle farm were coUected once a month in 2012 and analyzed by the HPLC method established. According to the resuk of the investigation, the concentration of sodium thiocyanate in raw milk was in accord with Poission4 distribution, the mean was 3.75 mg/kg, and the concentration range of 95% confidence interval was between 1.21-7.72 mg/kg. The change of the concentration was in related with the season when cruciferous plants were fed in Shanghai. In order to determine the relation, 20 healthy cow were selected and divided into 4 groups to do the test. The results showed that feeding cruciferous plants would improve the sodium thiocyanate concentration in raw milk, and it was the major influencing factor of the sodium thiocyanate normal physiological concentration of raw milk in Shanghai.
