全哺乳饲养方式麦洼牦牛公犊肉的营养及品质分析 被引量:3

摘要 为了解全哺乳饲养方式麦洼牦牛公犊肉的营养及肉质性状,对6月龄和18月龄麦洼牦牛公犊进行了屠宰测定。结果表明:6月龄和18月龄牦牛公犊的脂肪含量分别为1.43%、1.25%,蛋白质含量分别为22.92%、22.59%,其间均无显著性差异;水分含量6月龄为77.28%,显著低于18月龄(78.30%)。矿物质元素锰含量6月龄为0.20mg/kg,显著高于18月龄(0.13mg/kg),其他矿物元素间均无显著性差异。氨基酸各指标含量间均无显著性差异。6月龄牦牛公犊的饱和脂肪酸(SFA)、多不饱和脂肪酸(PUFA)、氨基酸总量(TAA)、必需氨基酸(EAA)分别为64.53%、1.61%、19.95%、7.75%,均高于18月龄;单不饱和脂肪酸(MUFA)、PUFA/SFA分别为33.85%和0.02,均低于18月龄,但其间均无显著性差异。重金属镉、铬、砷、铅和汞含量均远低于国家标准(GB2762-2005)的限量值,均未检测到六六六、滴滴涕、五氯硝基苯、金霉素、土霉素和磺胺类药物残留。6月龄和18月龄牦牛公犊肉具有高蛋白、低脂肪的特点,且矿物质及氨基酸含量丰富,属于优质蛋白质食物,是绿色、安全、环保、无污染的优质肉食品。 The nutrition ingredients and meat quality of Maiwa Yak male calves with six-month and eighteen-month age were measured to realize the nutrition and meat quality of quality of Maiwa Yak male calves under the whole lactation feeding model.The fat and protein content of Maiwa Yak male calves with six-month and eighteen-month age 1.43% and 22.92%,and 1.25% and 22.59% respectively and there was no significant difference between them.77.28% water content of Maiwa Yak male calves with six-month age was significantly lower than Maiwa Yak male calves with eighteen-month age.0.20 mg/kg Mg content of Maiwa Yak male calves with six-month age was significantly higher than 0.13 mg/kg Mg content of Maiwa Yak male calves with eighteen-month age and there were no significant difference in other mineral elements between Maiwa Yak male calves with six-month and eighteen-month age.There were no significant differences in different amino acid indexes.The SFA,PUFA,TAA and EAA content of Maiwa Yak male calves with six-month age was 64.53%,1.61%,19.95% and 7.75%,all higher than Maiwa Yak male calves with eighteen-month age.The MUFA content and PUFA/SFA ratio of Maiwa Yak male calves with eighteen-month age were 33.5% and 0.02,both lower than Maiwa Yak male calves with eighteen-month age but there was no significant difference.Their Cd Cr,As,Pb and Hg content all was far lower than the limit value of National Standard and the drug residuals were not detected.The meat of Maiwa Yak male calves with six-month and eighteen-month age under the whole lactation feeding model has high protein content,lower fat content and rich amino acid content,which indicates that it is the quality meat food with green,safety and pollution-free.
