摘要
扬州红楼宴是根据文学巨著《红楼梦》中所描述的肴馔名称、用料和烹调方法 ,查阅了明末清初民间饮食习惯和典故 ,在扬州菜的基础上 ,烹调出的色香味形俱佳的宴席。扬州红楼宴融红楼、茶道、音乐、书画文化为一席 ,有着与《红楼梦》审美意识相当的文化蕴含 。
Based upon traditional Yangzhou cuisine, Red Chamber Banquet, exquisite in color, design and taste,is made according to the dishes (including their materials and cooking methods) described in the famous Chinese novel Dream of the Red Chamber. To make the banquet,the chefs also consulted many historical records about the culinary customs in later Ming and early Qing dynasties. The Red Chamber Banquet is a combination of the tea ritual, music, panting and calligraphy as described in the novel. With a similar aesthetic and cultural taste as the novel, it can give one a refined culinary and artistic enjoyment.
