摘要
介绍以鲜牛奶为原料 ,经乳酸菌、凝乳酶发酵 ,分解 ,并采用特殊工艺制作的特殊乳制品———夸克的生产技术 。
Quark is a kind of dairy product. In this paper, the processing technology of quark was introduced:Fresh milk was fermented by cheese starter and rennet,obtained by special processing technology. The quality standard and quatity control of quark were studied.
