摘要
中国旅游饭店管理轨迹分析说明,古老的饭店业在中国管理却很年轻,正在深化管理的进程中,又搭上了"人本管理"的快车。因此,针对当代员工特质,区别管理方向和层面,设计、推行以规范、激励等不同策略相结合的刚柔并济式管理是完善中国饭店管理的重要而有效的措施。
An analysis of the management trails of tourism catering businesses in China reveal that the age -old catering industry in China has little experience in management .It has also met with human-oriented manage-ment while it is furthering its modern management .Therefore,the industry should design and promote an effi-cient management system that combines force with mercy .The system should be staff-oriented ,layered ,integra-ting punishment with rewards .
