摘要
通过单因素实验确定壳聚糖用量、处理时间、处理温度及废水pH的最适水平,再经四因素三水平正交试验确定最佳工艺条件。选用絮凝剂壳聚糖分离大豆乳清蛋白的最佳工艺条件为:壳聚糖用量0.4 g/L,处理时间45 min、处理温度15℃,废水pH调节为7.5,根据以上工艺参数对乳清蛋白的提取进行了初步探索,最终得蛋白得率为41.48%。此工艺简单易行,为大豆乳清蛋白的工业化生产提供了可行的参考依据。
In this study, the optimal level of chitosan dosage, the processing time, the processing temperature and wastewater pH is determined by the single factor experiment, and the optimal process conditions by four factors and three levels orthogonal experiment. The optimum conditions of isolating soybean whey protein by chitosan were:chitosan dosage of 0.4 g/L, the processing time of 45 min, the processing temperature of 15℃, the wastewater pH adjusted to 7.5, with the crude protein yield reaching 41.48%. The simple technique condition provided a practical evidence for industrial production of soybean whey protein.
