摘要 以新鲜水果为原料制备水果酵素,并将其提取物应用于卷烟加料,感官评吸结果表明,水果酵素提取物加入卷烟中能够丰富烟香、增加烟香中的甜韵感、降低刺激、柔和烟气,可明显改善卷烟的吸食品质.但如果添加量过多则会出现果香过于突出、掩盖烟香的现象.当以质量分数10 mg/kg增加于烟丝时,卷烟的增香效果最好. The fruit fermentation was made from fresh fruits and the liquid extracts were used in cigarette feeding process.The results of sensory evaluation showed that feeding fruit fermentation liquid extracts could enrich and soften the aroma of smoke and increase sweet sense and decrease the pungent to improve significantly the smoking quality of the cigarettes.However,fruit aroma would be too prominent if excessive feeding and would cover the internal aroma of tobacco.The best effect of flavoring was achieved when cigarettes contained fruit fermentation liquid extracts in proportion of 10 mg/kg.
