摘要
笔者以北京市蒙古族为调查对象,关注他们迁入到北京市后在日常生活中对传统饮食的情怀和实践情况。通过对奶茶、奶食品、炒米和肉食蔬菜以及特色米面食等日常饮食结构的详细考察,发现北京市蒙古族日常饮食早点基本保留传统特色,平日里食用的传统特色食品多带自老家,而像奶茶等特色饮食则因用具和原材料等条件的限制,制作程序简化,对于传统饮食的实践明显表现出代际和地域差异。
This paper took the Mongolians in Beijing as investigation object, concerned about the feelings oftraditional diet and practice in daily life after they moved to Beijing. Through the detailed study on the diet structure of milk tea, milk food, fried rice, meat and vegetables as well as the characteristics of rice pasta, we foundthat the Mongolians in Beijing retain their traditional characteristics of the basic breakfast. The daily consumptionof traditional foods always brought from their hometown. Due to the limitations of equipment and raw materials ofmilk tea and other special diet, the making procedure was simplified, the practice of traditional diet showed significant generational and geographical differences.
