摘要 电子舌技术是近年来迅速发展起来的一项新技术,因为其独特的优点在环境监测、生物医学、化学工程、食品分析等领域展现出广泛的应用前景。介绍了电子舌技术的基本概念、分类以及在食品溯源、食品新鲜度、食品品质分级、掺假鉴别、质量监控、微生物和重金属检测等食品安全检测方面的应用,探讨了电子舌技术在食品安全领域未来的挑战和发展趋势。 Electronic tongue technique is a novel technique which has been developed in recent years. Due to its unique advantages,it shows a promising future in environmental monitoring,biomedicine, chemical engineering,food analysis and other fields.The basic concept and classification of electronic tongue technique are introduced,its application in food safety testing field,including food traceabili-ty,food freshness,food quality classification,adulteration identification,quality control,microor-ganism and heavy metal detection are summarized and its challenges and future development directions in food safety field are discussed.
