摘要
本文研究了60Co-γ射线辐照处理对冷冻羊肉品质的影响。试验采用剂量为0、2、4、6和8 kGy,检测辐照前后羊肉中微生物、理化成分含量及酸价、过氧化值。结果表明:剂量为4 kGy的辐照处理,可以显著降低冷冻羊肉中微生物的污染程度,蛋白质和脂肪含量的变化不明显,氨基酸总量较对照有所增加,3种维生素的含量降低、脂质氧化程度加重。剂量为4kGy的辐照处理对羊肉的品质没有明显的影响,有利于冷冻羊肉的储藏保鲜。
In this study, frozen mutton was used to make clear the effect of irradiation by 60Co-γ ray on the quality of mutton. Irradiation dose were 0, 2, 4, 6 and 8 kGy, and contents of microorganisms, Physical and chemical compositions, acid values and peroxide values were detected. The results were that, when the irradiation dose was 4 kGy, frozen mutton had been decontamination significantly, contents of protein and fat been changed little, total content of amino acids increased a little, meanwhile, contents of 3 vitamines decreased, and the lipid peroxidation aggravated. Irradiation of 4 kGy will not make destructive inference on the quality of mutton and it will favor the fresh-keeping of frozen mutton.
