探析餐饮服务肉制品亚硝酸盐类添加剂使用的监管

摘要 目的探析餐饮服务业肉制品亚硝酸盐类添加剂使用的监管措施,为有效监管提供参考。方法结合法规要求和质量标准,对实际使用情况进行分析总结。结果与结论亚硝酸盐(钠)是肉制品中常用的护色剂和防腐剂,是剧毒物质,超量使用会严重危害人体健康,国家有关部门对其使用剂量有严格规定。在亚硝酸盐含量监管中,必须严格、客观和公正。 Objective To provide references for effective regulations and the supervision measures of the nitrite additives used in meat products of food and beverage service. Methods In combination of the regulatory requirements and quality standards, practical usage was analyzed and summarized. Results and Conclusion Nitrite (NA) is commonly used in meat products as the color fixative and preservative, which is a highly toxic substance. Overdosage of nitrite will cause serious harm to human health. National authorities have strict regulations for the dosage of the nitrite additives. The nitrite content monitoring must accord with the principle of strictness, objectives and fairness.
