摘要
本文系统分析了建国以来我国食用豆整体和主要食用豆品种的消费趋势、特征与需求。研究发现,建国初期到20世纪90年代初期,食用豆消费的基本特征是消费量逐步下降,而自20世纪90年代初期到现在,又呈缓慢增长态势,年均增长速度6.3%;我国食用豆产品的消费具有鲜明的特征,表现为食用豆是我国居民传统饮食的重要内容和营养安全的重要保证,以解决口粮安全为主转向解决营养安全为主,由食用为主向食用饲用并重转变等。预计随着人们生活水平的不断增长和对健康饮食的不断追求,食用豆在我国消费量将进一步呈现稳定上升态势。
This paper systematically analyzed the consumption trend, features and demand of Edible Beans in China since 1949. The analysis showed that the consumption of China's edible bean declined from 1949 to early 1990s, and turned to rise after early 1990s at a annual growth rate of 6. 3%. The distinctive features were, first the edible beans were the important food guarantee for residents and nutrition resources, second, edible beans served from food to food and feed, etc. It was expected that the consumption of edible beans in China would further show steady upward trend because of the growing living standards and the constant pursuit of a healthy diet.
