摘要
就天然植物色素的性质特点、种类及化学结构、提取与纯化、色素资源开发与重点开发对象和存在问题作了简述，为中国天然植物色素研究、开发、利用提供参考。
Characteristics and properties, extraction and purification, exploitation of natural plant pigment resources and key target, problems existing were summarized for reference to the research, exploit and make use of pigment in China.
