摘要
本文通过对古代方志的研究,于中国古代菌蕈栽培业的产生和发展多有新的发现.本文较全面地探讨了香菇、木耳、银耳和草菇的人工栽培历史和技术成就,并为香菇、银耳、草菇栽培起源的多元说提供了有力的证据;此外,还在方志中发现不少民俗学方面的史料.
Research into ancient Chinese local records has produced new findings concerning ancient Chinese mushrooms cultivation techniques.This article makes a comprehensive analysis of the history of the cultivation of the Xianggu mushroom(Lentinus edodes),the edible tree fungus(Auricularia a uricula),the silver fungus(Tremella fuciformis),and the meadow or field mushroom(Vovaria volvacea).Conclusive evidence is cited for the pluralisticorigin of the cultivation of edible mushrooms.Also included in the article is a discussion of the role of Chinese local folklore.
