脱水蔬菜保质辐照剂量的研究 被引量:1

摘要 从脱水蔬菜污染的细菌中分离出耐辐照细菌芽胞,并培养、纯化制成芽胞悬液。测定60钴辐照对该芽胞杀灭的 D10值与悬液中原始芽胞量。以菌量减少至 1000 cfu/ ml为标准,得出脱水胡萝卜、葱及辣椒粉的保质辐照剂量分别为 5.19、4.30、6.02kGy。 Radioresistant bacterial spores were isolated from the bacteria contaminating the dehydrated vegetables and were cultured and purified to prepare the spore suspension. The D10 value of 60Co irradiation for killing this spore and the original spore count in the suspension were measured. With decrease in bacterial count to 1000 cfu / ml as the criterion, it was found that the irradiation dosages for maintaining the quality of dehydrated carrot, scallion and chilli powder were 5. 19, 4.30 and 6.02 kGy respectively.
