雅安山羊乳的成分及理化特性研究I化学成分含量及其变化

Study on Component and Characteristic of Yaan-Goatmilk —I.Content of Component and Diversification

作者对 40只雅安奶山羊乳的化学成分含量进行了全年检测 ,结果显示 ,雅安奶山羊乳的总固形物、乳脂肪、乳蛋白质、乳糖和灰分的平均值分别为 1 1 9886 %、3 5 96 8%、3 6 34 3%、4 0 0 6 8%和 0 75 0 7%。乳的化学成分含量在各季度有明显变化。乳中脂肪和蛋白质含量与产乳量呈强负相关 (r =- 0 70 1 4和r =- 0 86 2 4)。乳糖含量与产乳量呈强正相关 (r=0 81 1 3)。

The this peaper report result determined conten of component of 40 Ya'an-goatmilk are in all-year.The average of general solid、cream、lactoprotein、lactose and mineral of Ya'an-goatmilk is respectively 11.9886%、3.5968%、3.6343%、4.0068% and 0.7507%.The conten of component of Ya'an-goatmilk are clearly vicisistudinous in different season.The conten of cream and lactoprotein shows strong negative relativity with galactopoiesis(r=-0.714 and r=-0.8624).The conten of lactose shows strong positive relativity with galactopoiesis(r=0.8113).And reported compose of amino acid of Ya'an-goatmilk.
