摘要
本文比较了五种不同植物来源的蜂蜜对红葡萄汁的澄清效果 ,探讨了蜂蜜添加量对红葡萄汁澄清效果的影响。试验结果表明五种不同植物来源的蜂蜜中油菜花蜂蜜对红葡萄汁的澄清效果最佳 ,其最佳用量为8 5 %。
Honey from various floral sources were compared for their activity in clarifying red grape juice.The clarification with varying the concentration of honey used was studied.Significant result was obtained with cole (Brassica campestris L.) honey.The concentration of honey giving better clarification was 8 5%.
