野鸭胴体品质的研究

摘要 本文测定了野鸭以及与其对照的北京鸭和大余麻鸭的屠宰性状、产皮力、pH值、嫩度和贮存损失率。结果表明,野鸭比对照测定的家鸭产肉、产皮力高,贮存损失率低,肌肉嫩度与家鸭相似。 An experiment was Carried out on Carcass quality of the eighth generation of domesticated mallard ducks(Anas platyrhychos) to compare with Peking duck and Da-Yu sheldrake,All ducks for measure were reared under similar conditions,and slaughtered at 13-weeks age.The results were.Eviscerated weight as % of dressed weight averaged 74.18, 73.68 and 72.60 respectively,Brest and thigh muscles weight as % of eviscerated weight 37.79,37.82 and 33.09.Additionally the.mallard had good Down-skin-bearing productivity. Breast muscle pH was 6.33,6.13 and 6.13 respectively,tenderness 2.93 2.95 and 3.06,dripping loss percentage 2.47,2.67 and 2.80.Corresponding values for thigh muscles were 6.54,6.33 and 6.35,1.87,1.90 and 2.01 ; 2.50,2.61 and 2.82. It was concluded that the meat quality of the mallard was superior to that of domestic ducks,Which is why mallard meat was so appreciated on the international market.
