摘要
双水相萃取技术在食品与发酵工业中的应用作为一个新的技术领域日益受到重视;它与传统的萃取方法相比有独特的优点。本文回顾了双水相萃取的历史,探论了双水相萃取技术的原理和特点,综述了双水相萃取技术在食品与发酵工业中的应用,讨论了其工业化应用前景及存在的问题,以期加速其在食品与发酵工业中的应用。
: The application of aqueous two phase extraction technique in food and fermentation industries,which is a new technological field,has been paid much attention increasingly.The technology has some unique characteristics compared with the traditional extraction methods.In this paper,the history of the technology and Its application in food and fermentation have been reviewed.The principle,characteristics,industralization prospect and existing problem of the technology were discussed,in order to popularize and quicken its correct use in food and fermentation industries.
