摘要
以胆固醇为惟一碳源和能源 ,从食肉动物肠道的 19份样品中筛选出有胆固醇降解酶活性的菌株 4 0株 ;通过比较 ,选出了在培养液中生长速度较快和产酸能力较强的 4株菌 ,进而选出胆固醇降解活性较高的菌株 T12 - 1;菌株 T12 - 1发酵上清液应用在蛋黄胆固醇降解中 ,作用显著 ;经动物试验 ,T12 - 1菌株在食品中应用安全、无毒。
bacterial strains that utilized cholesterol as sole carbon and energy source were isolated from carnivorous animal intestines. A strain of Bacillus , No.T12 1 was selected for degradation of cholesterol. The action of degrading cholesterol in egg yolk was obvious and it was safety without any toxicity to apply in food processing.
