摘要
剑南春酒的纳米图像的研究成功 ,标明中国白酒的酿制研究已进入“纳米时代” ,运用纳米技术研究酒的微观世界 ,可获得不同白酒的微观成分的非均相分布情况 ,获知其内质颗粒大小和分布特征。可利用其结果对品牌白酒进行微观标记 ,研究白酒风味科学和进行白酒的风格酒体设计 ,推动21世纪中国白酒质量的提高和技术的发展。
The successful research on nanometer images of Jian′nanchun Liquor indicates that the study on liquor production in China has entered “nanometer time”. The application of nanometer techniques in the study of microcosmic world of liquor could not only obtain the heterogeneous phase distribution of different microcosmic components of liquor but also get distinct data of its distribution characteristics and the sizes of the granule. And we could make use of the new technique in the study of liquor flavour sciences or in the design of liquor style which would advance quick development of liquor quality and liquor-making techniques in China in 21st Century
