摘要 抗性淀粉(RS)是指在健康正常人的小肠之中不能被消化吸收的淀粉及淀粉降解物的总 称。食物中 RS的产量可以受到多种因素,如淀粉来源、植物的基因类型、加工条件、改性 因素等影响。本文就目前国际上对这些方面研究的最新进展作一综述。
