摘要
通过高效液相色谱等的分析检测,研究了陈旧蔗、霜冻蔗等顽性蔗汁的主要成分,并对顽性蔗汁与正常蔗汁的澄清特性分别进行了实验探讨。
The main composition of the refractory cane juices from obsolete cane and frosted cane was analyzed with HITACHI 835-50 amino acid analytical instrument. Their character of clarification was also investigated and compared with fresh cane juice in experiments. The causes of difference in clarification between the refractory juice and fresh juice were finally discussed.
