烤烟发酵过程中氧气条件对烟叶化学成分的影响 被引量:15

摘要 采用人工发酵法研究了氧气条件对发酵烟叶化学成分的影响。结果表明,在有氧条件下发酵烟叶的还原糖、总氮、烟碱、蛋白质、总氨基酸、淀粉、多酚和类胡萝卜素含量的下降幅度大于无氧条件下发酵的烟叶。这说明发酵过程中氧气条件对烟叶主要化学成分的降解和转化具有重要作用。在实际烟叶发酵过程中,应提供充分的氧气条件,以促进烟叶品质的转化。 Effect of oxygen condition on chemical components in flue cured tobacco was studied by method of artificial fermentation.The data showed that the content of reducing sugar,total nitrogen,nicotine,protein,total amino acids,starch,polyphenol and caroteinoid in the fermented leaves under aerial condition was much lower than that under anaerobic condition,suggesting that oxygen condition had notable effect on decomposition and transformation of the main chemical components during fermentation.Sufficient oxygen is necessary in practical tobacco fermentation process.
