摘要
小麦胚芽是小麦籽粒的一部分 ,被营养学家们誉为“人类天然的营养宝库”。本文论述了小麦胚芽的化学成分及营养价值 ,并综述了小麦胚芽综合利用中麦胚食品开发应用的研究进展。
